How this works

  • Fill the jug to just below the spout base; overfilling is the most common cause of splatter and poor texture.
  • Stop steaming when the jug is uncomfortably warm to hold, around 55 to 65 C. Scalded milk loses sweetness.

Why start with cold milk?

Cold milk buys you more time to introduce air before the temperature climbs. Stretching should be finished by roughly 100 F, after which you are only spinning the milk to fold it in.

What temperature should I stop at?
